smoked salmon rollup

Simple and tasty. Those are the two words that come to mind when I’m contemplating lunch. I want my food to take very little time to prepare, to be good, and it doesn’t hurt if it’s pretty to look at. We do eat with our eyes first after all.

This quick smoked salmon rollup and side kale salad meets my lunch criteria. It came together super quick and it was absolutely delicious. If you are a fan saving time in the kitchen, smoked salmon, cream cheese, and whole food FLAVOR, then this recipe is for you.


Ingredients (smoked salmon rollup):
2-4 ounces wild caught Nova Scotia smoked salmon
1 ounce cream cheese
1 teaspoon fresh lemon juice
½ teaspoon fresh cut parsley
1 whole wheat tortilla

Ingredients (kale salad):

2 cups kale
1 tablespoon olive oil
5-8 cherry tomatoes, halved
Salt and pepper to taste
½ half lemon juice,
Parmesan cheese (optional)

Directions (smoked salmon rollup):
Mix cream cheese, lemon juice, and parsley in a small bowl. Lay tortilla on a clean surface and spread cream cheese mixture. Top with salmon and rollup. Cut the rollup in half and then cut the halves in half and then cut that in half again (you want 8 rollups per tortilla).


Directions (kale salad):
Massage kale with olive oil for 3 minutes. This will help tenderize the kale. Add lemon juice, salt and pepper to kale and mix until kale is well coated. Plate and top with cherry tomatoes. I sometimes like topping this super simple salad with parmesan cheese.


This is a favorite lunch go to. Nothing complicated and it takes less than 10 minutes for it to come together. It looks pretty and impressive but is one of the easiest things to make. I love quick and simple lunch ideas. I love a good rollup recipe. And this one is a win in our book. You can also make large batches of this recipe and have it ready to go for lunches throughout the week. It holds well in the fridge (just make sure to wrap it in plastic wrap so the tortilla doesn’t dry out).
