30 smoothies in 30 days (day 2): coconut turmeric

Yesterday I shared a favorite smoothie of mine and I think it’s only fair to not only share success and favorites but the real. Sometimes I make smoothies (and recipes in general) that are just OKAY or MEH. This happens to be one of the MEH recipes. I experimented with a new creation today and although it wasn’t awful, I’m not going to lie and say it was fantastic either. It was MEH. I wanted a creamy coconutty turmeric-y elixir style smoothie and wound up with a warm, but very flavorful soupy mixture.

Not all was bad though. I think the flavors are there and I think it could be a really good smoothie. I think it needed some ice or frozen banana and frozen mango to make it better. Instead of using 1/3 of a fresh banana, I should have used one entire frozen banana. It also could have used a date or three.

I may revisit this smoothie idea later in my challenge with some revisions but for today? I’m sharing my MEH smoothie and do NOT highly recommend haha!

  • 1 mango, cut into chunks
  • 1/3 cup coconut yogurt
  • 1 orange, skin removed
  • 1/3 cucumber, washed and cut
  • 1/3 banana
  • 2 small carrots, washed and cut
  • 1 tablespoon ground turmeric
  • **1/8 teaspoon fresh ground black pepper

**NOTE: Yes, you read the ingredients correctly. We are using pepper in a smoothie recipe. Combining pepper with turmeric increases turmeric’s absorption in the body by over 2000%. So add that pepper if you make this (which I do not recommend unless you make the modifications I listed above).

Place all ingredients in a high speed blender and blend until creamy and smooth. You may need to use a spoon to scrape the sides from time to time.

Tomorrow I’ll likely go back to an old favorite. But experimenting is fun too- it’s how I find my favorites. See  ya then!

seriously. don’t be a hero and try to make this,

I believe in big hair and and live by the 5 (sometimes 10) second rule when food falls on the ground. I want to create a greener, simpler life for my little family while at the same time sharing everything I eat, yoga poses I try, and ideas about life with my smartphone attached to my hip. I'm sort of a hot mess living by the motto "fake it until you make it."
