30 smoothies in 30 days (day 8) : mint tea zinger

I wanted a green smoothie today but I don’t have any fresh greens in my house. I went grocery shopping over the weekend and we are already out of the leafy greens I bought. Which is a good problem to have (because we are eating our veggies!) but not ideal when you want a green smoothie. I look forward to the day when our garden is sprouting copious amounts of kale, lettuce, spinach and chard. Soon. Hopefully.

For now though, I didn’t feel like going to the grocery story hungry to get fresh greens so I decided to improvise with my smoothie today. I checked my freezer to see if we had any frozen greens and that was a negative. However, I did find a bag of frozen edamame. I thought, why not?

And I’m happy I did because this was a great smoothie. Packed with protein (edamame), green tea for a natural no jitter energy boost, and minty flavor, this smoothie turned out a lot better than I thought it would. Not every smoothie is a winner, but this one is.


  • 1 cup frozen edamame
  • 1 teaspoon spirulina
  • Handful of mint
  • ½ avocado
  • 1 banana
  • 1 cup cold green tea
  • 2 pitted dates
  • 1/3 cup coconut yogurt
  • 1 tablespoon bee pollen


Place all ingredients in a high speed blender and blend until smoothie consistency.
